Gypsum (calcium sulfate) adds permanent hardness (calcium ions), lowers pH, and adds water hardness to brewing water before the boil. One gram per gallon adds 62 ppm calcium, 147 ppm sulfate. To add calcium ions, Use 1/2 to 2 teaspoon per 5 gallon batch.  It is added by dissolving the gypsum in the mashing and sparging water or directly as a powder into the grist or mash vessels at mashing.  Brewers that use distilled or RO water like to add some gypsum back into the water to give it some hardness.  Gypsum can also be used to lower the pH of water.

Description

Gypsum is a natural form of calcium sulfate, CaSO4.  It is relatively insoluble in water and is the main constituent of permanent hardness in water. When in the crystalline or dry powder form, it is also known as “Alabaster” or “Plaster of Paris.”

Brewers know it as the main mineral in the well water of Burton Upon Trent, England, and is widely considered to be the essential component of the water for pale ale and India pale ale brewing.  It is the main ingredient in “Burton Water Salts”.

Usage: 1/2 – 2 teaspoon in the mash or sparge water
