Traditionally roller mills are set to a gap between 1 and 2 credit card thicknesses. You can increase extraction efficiency and reduce processing problems by using the correct gap for your setup. According to our distributor for this item, the following settings apply to many brewing situations:
Coarse 1.25 MM Gap Setting
Standard 1.00 MM Gap Setting
Fine 0.75 MM Gap Setting
Extra Fine 0.50 MM Gap Setting
I also noticed that some online discussion groups have postings recommending gaps as low as .032, but note that with gaps so narrow a relatively fine flour is produced and you may have processing issues in the mill and in lautering.
