Waimea™ was developed by The New Zealand Institute for Plant & Food Research and boasts big Alpha Acids (16 – 19%). Pedigree: Granddaughter of New Zealand Pacific Jade. Because of the high Alpha Acids, Waimea works well as a bittering hop for big IPAs. Waimea’s aroma and flavor is a pleasant balance of fresh citrus and resinous pine. Aromas of tangerine, grapefruit, and pomelo can be achieved through dry-hopping and whirlpool additions.
