Description
The Finest malt from the British Isles, Maris Otter thrives in the maritime climate of Avalon. Maris is an English 2-row varietal barley introduced in 1966 that was developed specifically to produce high quality malt for the production of ale. It has since been largely been replaced by industrial varieties with more yield and more reliable production. Maris Otter has pretty much become an “heirloom” variety malt prized by many craft brewers in the UK and the United States. Some of the production is still floor malted, a process that intensifies this barley’s natural round, biscuity flavors.
Its low nitrogen content, uniformly plump kernels, and robust husk has made it a favorite among English brewers for its reliable and forgiving low protein brewhouse performance. The unique heirloom Maris Otter flavor adds something to the beer which may be absent in modern barley varieties grown for yield and ease of agricultural production. It is usual for malting barley varieties to be grown for typically five to ten years, until they are superseded by newer, higher yielding and more robust varieties. Maris Otter however is the exception. Although there have been many varieties with higher yields and extracts, none have managed to remove Maris Otter from its position.
This fine base malt will easily convert with a single infusion mash. Produces an orange tinged golden wort with a unique rich, slightly nutty flavor. An excellent malt for any English style beer.
