Description
Directions: Use a two pass process. Run the clean bottles through once with Sulfite solution. Give them a few mintutes to gas and then run them through again with some of the wine you will be bottling. The second pass is to remove excess sulphite from the sterilized bottle.
Here’s the secret I promised: Certain wines especially long keeping reds will benefit immensly from the use of an inexpensive Cognac or Brandy in the reservoir tub for the second rinsing pass. The Cognac will open up the wine’s bouquet giving it an exceptionally good head start! Notice in the illustration above they are using some of the wine which also works. The idea is to put the sulfite in to sterilize the bottles then take most of it out with the second rinse.
