Amylex from DuPont Industrial Biosciences is used to increase starch conversion in mash and cereal cooking applications. Amylex is a liquefying α–amylase and provides efficient starch liquefaction, extraction and reduced viscosity. Mix well to increase contact at the active sites where the enzyme binds with the starch molecule to catalyze the sugar conversion chemical reaction. Directions: Add into your mash during the mashing-in or directly into your un-boiled wort to prevent the occurrence of starch positive wort. Mashing-In: 0.01-0.05 kg/MT of grist. Try 1/2 teaspoon for a 5-8 gallon batch.
