We have fermented this yeast at 58F and had great success. If you ferment this strain in the high fifties we recommend you make a yeast starter. The cooler ferment produced less esters (fruit character) and made a really clean kolsch almost tasted like a standard American lager. Ferment for 10-14 days in the primary.
