Early versions were typically all-malt and had a lot in common with American Barleywine, but the style has refined over the years to incorporate a proportion of simple sugar to maintain the higher alcohol but reduce the body of the beer. The lighter body lets the hop character shine brighter and doesn’t fill you up after only one pint. This recipe is one of my favorites.
