This product is the result of the research and development work of Renaissance Bioscience Corp. (Vancouver BC, Canada) in partnership with Lallemand Brewing. LalBrew NovaLager was selected using classical and non-GMO breeding methods to obtain a novel Saccharomyces cerevisiae x Saccharomyces eubayanus hybrid strain that defines a novel Group III (Renaissance) lager lineage that is distinct from any other traditional Saccharomyces pastorianus strains. This strain is a low VDK/diacetyl producer and utilizes patented technology from the University of California Davis (USA) that inhibits the production of hydrogen sulfide (H2S) off-flavors, therefore reducing the maturation time associated with lager beer production

Understanding the needs of today’s brewers has led us to develop new premium strains of brewing yeast and bacteria product lines. Delivering excellence in consistency, reliability and purity, these yeast and bacteria products empower brewers to exercise greater control over the fermentation process, expressing their creativity to brew beers with the desired aromatic and flavor qualities.

Lallemand Inc. Is a privately-owned Canadian corporation that researches, develops, produces and markets yeasts, bacteria and related products with the aim of reproducing, managing and optimizing natural fermentation processes in the agri-food industries.

Lallemand’s presence in the brewing industry dates from the early 1970s, when the company started producing dried pure culture brewing yeasts for beer kit manufacturers in Canada. In subsequent years, this activity was expanded to the production of other specific ale and lager beer yeasts for different clients in the United States, Europe and Australasia.
Lallemand’s extensive, unique knowledge in the propagation of many different yeast strains led us to be consulted by a number of international breweries on yeast nutrition. As a result of this expertise, we developed and continue to perfect a specialized range of yeast nutrients that target specific problems in the brewery resulting from variations in raw material quality.
Lallemand’s beer-related activities have continued to grow, expanding beyond the production of beer yeast and yeast nutrients for the industrial, micro and home brewer. Strategic acquisitions of the Siebel Institute of Technology and AB Vickers Ltd. have helped enhance the platform from which new products and services are launched.
Today, Lallemand Brewing is a global business serving all segments of the brewing industry with products, services and education.
