Dry Malolactic bacteria, Oenococcus Oeni strain manufactured by Christian Hansen laboratories. Malolactic cultures are bacteria that convert harsher malic acid to soft lactic acid. They are often used in red wines to mellow them and sometimes in Chardonnay and Sauvignon Blanc to provide the buttery notes.  This was the original ML strain that most winemakers used.  May be added any time after the 3rd day of fermentation.  Packet is good for 66 gallons, partial packets may be folded, paper clipped and stored in cool dry place for up to one year.

Be aware!  This packet contains a VERY small amount of VERY powerful product.  The package is very much oversized, but it didn’t leak!  There’s only about 1/2 tsp.
