COMMENTS on the Elderflower wine recipe on the package:  Use the whole pack, not just 1 ounce.  Place contents of packet in straining bag with several marbles so that it sinks or add them in loosely and strain them out later.  A stronger flavor can be achieved by bringing 4 cups of water to the boil, turn off the heat, and add the elderflowers.  Stir until all the flowers are wetted and cover the pan immediately.  Allow to steep for 10 minutes.  Do not boil further.  You will loose some higher aromatics but the overall Elderflower will be more prominent.  Works great in a tea ball!

This 2 ounce pack of dried elderflowers is equivalent to 2 cups of fresh elderflowers.  The European elder is a plant native to Europe, Northern Africa, and Western-and Central Asia. Its flowers and berries have a long history of use in traditional European medicine. Elder berries have also been used for making preserves, wines, winter cordials, and for adding flavor and color to other wines.  These Elderflowers are commercially packed in a food certified facility.

Elderflowers were traditionally taken in Fall to build up ‘poorly folks’ for the winter.  It was thought that used as a de-tox, Elderflowers would build the immune system by clearing toxins thru the lymph glands.  For respiratory problems, elderflower was used to treat asthmatics in the days before “modern” medication, it seems to have some value as an expectorant.

Elderflower is used in Ritual for protection and to ward off evil.  It is said that Elderflower can return an evil spell back to its source. It is also used for Healing, Prosperity, Fortune and Good Luck.
