These tests solely measures FREE sulfur dioxide. Total sulfur dioxide present in must and wine is not as useful as a preservative as just free sulfur dioxide, as total SO2 is equal to free + bound. The portion of total SO2 that is bound to other chemical components has reduced effectiveness by 30 – 70% therefore free SO2 is much more useful for winemaking. Also, the degree of binding can change over time, affecting the ability of an adequate dose to continue providing its preservative properties. NOTE: Contains 8 Low Range (0 – 40 ppm) and 2 High Range (40 – 130 ppm) Tests. During maturation and storage, concentrations of free SO2 values of 25 mg/L on red wine and 30 mg /L on white wine are recommended. TTB has set a limit of 350 mg/L (ppm) for commercial wines.
