Description
This strain assures a quick start of the fermentation. Montrachet has optimum resistance to all nutritional deficiencies and good 15% alcohol resistance. Montrachet is specially recommended for fermentation without temperature control because of its ability to ferment within a large temperature range (15°C to 35°C, 59°F to 95°F).
Red Star Montrachet yeast is Davis 522, strain of Saccharomyces cerevisiae, derived from the collection of the University of California. This strain has been widely used in the U.S. since 1963. It is a strong fermenter and will readily ferment grape musts and fruit juices to dryness. This strain also has good tolerance to free sulfur dioxide but should not be used on grapes that have been dusted with sulfur. Be sure to use 1 tsp per gallon yeast nutrient on anything not a grape fermented with Montrachet.
