Safcider (Now AB-1) Cider Yeast offers delicate fresh apple and apple sauce notes.  AB-1 is the right choice for balanced cider and it works well even under difficult fermentation conditions.  This is a 5 gram pack sufficient for 6 gallons.  AB-1 is a fructophilic strain (ferments fructose) selected specifically by Fermentis Lesaffre to make cider from apple, blackberry, blueberry, cherry, pear, pumpkin, strawberry, pretty much any fruit.  For all types of ciders even under difficult conditions.  Ensures a very good assimilation of fructose and it is excellent for high gravity ciders.  You even can use this yeast to make sparkling (Champagne) ciders.  Being replaced by Safcider AB-1 in the new line, AB-1 AC-4 AS-2 and TF-6 also available here.

Description

This specially selected cider yeast from the Champagne region produces excellent ciders of all types made from apples or other fruit. It is is fructophilic, meaning it will ferment fructose.  AB-1 is able to ferment even under difficult fermentation conditions and works in a wide temperature range between 50 and 86F (10 and 30C). The ideal temperature range is between 64 and 75F (18 and 24C).  Safcider works well at low pH levels down to 3. 3pH. It has low nitrogen requirements, is highly flocculent and is able to ferment fructose very well.
