If flavor is your main concern this is the yeast you need to be using. Different fermentations require different materials. If you want to duplicate an expensive whiskey or develop your own you need the correct yeast. One of the turbo yeasts is not going to produce the flavorful result you want. Fermentis has spent several years and millions of dollars obtaining, developing, and refining this strain of saccharomyces cerevisiae.
Although this yeast is expensive when compared to our Red Star DADY, the pitch rate is 50-80 grams per 100 liters which we figure to be one or two grams per 5 gallon batch, some say to use more but that would be wasteful, make a starter. One brick of this yeast should last you a good long while and will generally be good long past the expiration date.
