Description
Saflager S-23 is best when fermented at low temperatures, yet can ferment at higher temperatures (61-68° F). If you ferment at warmer temperatures you will get more ale-like character, think Anchor Steam. Sedimentation is high and Final Gravity is medium. Excellent for bottle conditioning. You can rehydrate but it works very well simply sprinkled over the surface of the wort. One packet is sufficient for 5-6 gallons. Dry yeast stores very well for long periods, and when properly hydrated prior to pitching presents more active cells than liquid equivalents.
