Optimum fermentation temperatures are 57°-77° F, so it can be used at room temperature and retain a clean flavor. This yeast is considered extremely hardy and not at all picky. Directions say to rehydrate before pitching we suggest not. Just sprinkle on top of cooled wort and cover, wait 20 mins, then stir in. This yeast is fresh and just received.
