Clean raw wheat is a raw wheat grain traditionally used in Belgium to brew Wit biers, as beers made with unmalted wheat often maintain their desired “white” or cloudy look and generally do not drop out bright. It creates a stable haze that is expected of this style. Unmalted Wheat has a strong grain flavor, and a very light straw color. It is used in many traditional Belgian styles to add flavor, cloudiness, and to improve head formation. The starch in raw grain is not gelatinized and the protein content is high. Depending upon use, a lengthy cereal mash and/or protein rest may be required. If you are looking for that spicy aroma, it is the ferulic acid in wheat that spikes it.
