This kit will get you a shorter lag time, reduce the chances of a stuck fermentation, and reduce the possibility of fruity ‘off’ flavors due to stressed yeasties. All commercial brewerys have some way aerate their worts. Aeration is the most effective approach to this problem.
Aeration replaces the oxygen depleted during the boil. Yeast needs some oxygen to function at its best so all just-boiled cooled worts will need aeration. This is the only time air getting to your wort is a good thing. You should not aerate while the wort is hot or even warm. The generally accepted temperature for aeration is 80°F. Aeration can be accomplished by vigorous stirring, pouring back and forth, or if you have this kit, simply dropping the diffusion stone in the bucket and turning on the pump for 30 minutes.
By volume, dry air on this planet contains 78.09% nitrogen, 20.95% oxygen, 0.93% argon, 0.039% carbon dioxide, and small amounts of other gases. By adding air the lag time between pitching yeast and noticing a vigorous fermentation is reduced. The sanitary air filter keeps out all living organisms including wild yeast and acetobacteria, so your wort is actually safer than it would be with stirring splashing, or pouring back and forth.
