Here’s a 500 gram foil sealed brick of high quality “One in a Mill” baker’s yeast. This is the old-timers choice for distilling with grain only and very little sugar. If you use One in a Mill Instant Dry Yeast (which is a standard baker’s yeast) for fermenting alcohol, you can typically expect a maximum ABV of 8% to 12%, perfect if you are doing a stripping run anyway. Typically a couple cans of tomato paste were added for yeast nutrients. This yeast is selected for rapid CO2 production and I think those old boys used it because it was what they could get. Fun for recreating old recipes!
As a nice bonus this is excellent bakers yeast! Save some for your bread, rolls, pastries, pretzels and pizza crust. Light and airy texture, keeps rising while it bakes. Experienced bakers say the texture is very fine, which allows you to skip the first proof in breads, saving over an hour! Works great in bread machines. This yeast is known to last at least a year after the package is opened. Our storage suggestion is don’t freeze or fridge it, store at room temperature someplace cool and dry like in the back of a drawer or cabinet inside the house. Some bakers do store it in a clean dry mason jar and then freeze it. If it clumps up we told you so.
